Majie Chilli Biscuit: A Rare Heritage Spice Condiment

Majie Chilli Biscuit (Laat Ziu Beng 辣椒餅) is a rare heritage spice condiment of the Cantonese diaspora in Singapore, specifically the iconic Majie community. The Majie were a group of women who took oaths of celibacy and worked as domestic helpers, or amahs, in Singapore and Malaysia from the 1930s to 1970s. They were mostly from the Shun Tak district, about 100km from Hoiping where my own parents are from, in Guangdong, China.
Majie Chilli Biscuit is made from a dried concoction of fermented black beans (dau si 豆豉), garlic and chilli. I learnt to make Laat Ziu Beng from an aunty in Shun Tak during the filming of Season 1 of In Search Of Heat on ChannelNews Asia. My Chilli Biscuit is true to the original recipe, but spiked with Southeast Asian heat level.
